I learned the hard way that you always keep your hand on top of a champagne cork until you properly remove it!

The best wines in the world are the most precious, be they expensive or not. Seek not only the expensive, seek the best.
Every task is important. If anything is worth doing at all, it is worth doing well, even cleaning the toilets and sweeping the parking lot.
This is a very guest oriented industry. I always rely on my guests to motivate and inspire me by challenging me to provide better service, better wines and pairings and a great overall experience.
My best internship was working at the Ryland Inn in the Garden in 2001 and 2002. It connected what the artists and craftsmen did in the kitchen with something very natural and beautiful.
Guenter Seeger taught me about integrity in the work one does every day. Craig Shelton taught me to rely not on vague ideas of flavors, but on a wine’s structure while pairing food and wine. Daniel Johnnes taught me about Burgundy!
