I have to remind myself to breathe sometimes. I have to remind myself to be present, you know. Remind myself that the sky is not falling, that there is no other shoe, which is incredibly difficult because there is always another shoe.
I think, maybe if I could provide more amusement or enjoyment for myself, it would be easier to provide for others.
We’re gonna have to find people that want to learn, which is gonna be impossible. But it’s even more difficult to teach people how to give a s***.
Advice Chef Andrea Terry gave me about going out on my own the night she closed her own restaurant (Ever) has stuck with me, “you have no idea what you’re doing, and therefore, you’re invincible.”
Some of my nonnegotiables include: vibrant collaboration, change menu every day, consolidation and speed, confidence and compliance, in and out service, pursuit of excellence, details matter, know your stuff and FOCUS.
