EDUCATION
Hiring the right people for the right positions is key to the success of our restaurants. They must align with your culture and core values, we do not look to hire just anyone to fill the position. This is why we spend so much time and money on hiring, training, and being knowledgeable about the financial part of the process.
Coffee gets me through each shift, every day. I cannot do my job or live without it!
We look for people that are positive and passionate. For a line staff, having sincere hospitality and passion is most important; we can always teach them the skills and techniques. As far as hiring for management, there has to be a baseline of knowledge and skills.
I believe that one of the only ways to keep my teams inspired and motivated is to give them the autonomy to execute their ideas and try new things. Motivation has to come from within. From a management perspective, you must lead by example daily; put aside your personal issues and leave them at the door.
I worked a lot in my parents restaurant when I was growing up. We had a family style Italian restaurant, where my dad did all the prep and cooking. At one point we were struggling, but he always led by example. Perseverance and hard work, not matter what you do, as long as you push forward with consistency and passion, will pay off. You won't have instant gratification, but you'll see more growth over an extended period of time, which leads to being successful!
