The history of food and preserving classic techniques keeps me motivated and inspires me daily.

To excel in your career, you must have an attention to detail and know how to work with fresh ingredients. We do everything from scratch at the Hungry Pigeon, and knowing how to use fresh produce and handle it properly without it being a chore is a must.
I open myself to a lot of input not coming from a pastry background. I consider myself a part of my production team, and together we have a job to do. There is no job that is too small for me, like scooping chocolate chip cookies and seeding grapes. I try to remove hierarchy in our business, which garners a lot of respect. We are all equals at the Hungry Pigeon.
All of our employees go through a stage. They have to have the willingness to be humble and honest, and work as a team. We want them to feel empowered but cultivate our culture together so everyone gets something out of working with us.
I cannot do my job without time and space and my team!
