It's worth investing time to keep yourself organized. Set a clear schedule for tastings, appointments etc. and start and end on time. This is the only way to accomplish everything.
The best advice I've ever gotten is that perception is reality.
There are some battles that are worth fighting and some that simply are not. If you strongly believe in something but no one else around does, you should rethink that belief.
From my first wine job at Italian Wine Merchants, I learned that with professional service guests feel at ease and more comfortable to spend money with you.
I stay motivated by reminding myself that even the worst day in the restaurant industry is still better than the best day in a business I don't care about.
