A bar is a team. I find the more we can ask our team to contribute, the more sense of ownership they have over the space. At Leyenda, we did R&D together, and people put their own cocktails on the menu. At Whoopsie Daisy, we share all of the portfolio tastings that happen and encourage staff to go and taste. If someone really likes something, we take that recommendation and put that bottle on the list.


EXPERIENCE
EDUCATION
I educate myself through travel. Traveling the world, eating & drinking in other places, and seeing how they use flavor and how they approach hospitality is the only way to keep learning.
I look to hire the person who gets that certain scratch itched by serving people. The best hospitality professionals get a giant serotonin boost and a dose of gratification after giving a patron something that they want. It's a specific type of person who loves to give and feels good doing so.
I find inspiration when looking at successful people in any industry. I find success within politics or art particularly inspiring. For flavor inspiration, I tend to study perfumeries and also pastry bakers, to see what kind of interesting flavor combinations they may work together.
For self-care, I invest a lot in keeping my body and mind in as best health as I can. I regularly go to the acupuncturist and chiropractor and get many massages sprinkled in. I also have an arsenal of therapists who I talk to regularly.
I opt to listening to political podcasts to get the information that I need and to stop doom-scrolling various news apps. Daily I listen to: The Daily, NPR Up First and the NPR Politics Podcast (and some others sprinkled in). I also use this amazing news aggregator called Ground News. For work, I think reading Punch Drink is an absolute must to stay informed on what's going on.
