Treat every restaurant as if it is your own.
I’m drawn to people who are eager and willing to learn. They don’t necessarily need to have the skillset -- just the willingness to show up and learn.
The most important skills as a chef and leader are patience, the ability to problem solve, and the ability to listen.
Inspiration comes to me in many forms. It’s always different places at different times. It can come through music, art -- usually when you’re not expecting it.
I like to run often -- as frequently as possible. I also end each day with a traditional Japanese tea ceremony. I have 40 different teas at home.
I constantly look for ways to keep my team involved and engaged. Whether it’s through team building activities or bringing in outside speakers or demos that are engaging and interesting.
My #1 piece of advice: Always hire the person with the least experience who is the most eager.
