Enrique Olvera, Chef/Founder ATLA, Cosme, Pujol: Enrique Olvera is the chef/founder of Cosme and ATLA in New York City, Damian / Ditriot in Los Angeles, and Pujol in Mexico City. Pujol currently ranks 20th on San Pellegrino’s prestigious list of the “World’s 100 Best Restaurants.” His debut U.S. restaurant, Cosme, garnered international acclaim in its first year, earning a three-star review from the New York Times and a James Beard Award nomination for Best New Restaurant in America.
Santiago Perez always felt at home in the hospitality industry and has always had a clear vision of the key principles of service. After working as an investment banker in Mexico City, London, and New York he chose to incorporate his love of hospitality into his career. Over several meetings and a few rounds of mezcal, Perez partnered up with Chef Enrique Olvera to launch Cosme. As Managing Partner of Cosme , ATLA, and Damian / Ditriot , Santiago oversees the business development and financial operations of the company.
