Blackbelly Market

Blackbelly was founded by award- winning Chef Hosea Rosenberg in 2011 as a high-end boutique catering and event company, with a food truck and farm. It has since evolved to include an acclaimed full- service dinner restaurant, breakfast and lunch café, and Boulder, Colorado’s only independent butcher shop licensed to make and sell house-cured meats. Through its evolution, the mission at Blackbelly has remained that: food will always start with seasonal, locally-grown ingredients, and pasture raised sustainable animals.
