Working for Patrick Feury taught me to see food differently. It changed my view on what food can be. Le Bernardin was all about technique, execution, and consistency.
You must work hard to succeed.
Criticism of your food is not personal, it's necessary.
By respecting people and being fair, you keep your team motivated. This makes people want to work harder for you and creates loyalty. I manage people based off of each one's own personality.
Learn how to edit yourself.
The one thing I cannot live without in order to do my job is my team!
The Flavor Bible is a great reference and I use it constantly.
Working with food gives me the creative outlet that I need and love. It is a never-ending learning process and I thrive on that.
Food is about making your guests happy, not your ego.
