The Legacy of Floyd Cardoz, Celebrated Chef, Mentor and Industry Leader (Rest In Peace; Gone Too Soon But Never Forgotten)

Always cook from your heart and the food will always taste good.

I love food, I enjoy food and I just love cooking. That is what inspires me every day.
I've learned that you have to be kind to people in order for them to cook good food.
Danny Meyer once taught me to follow three alphabet letters whenever I’m doing anything: P.E.F. which stands for passion, energy and fun. If you use that in everything you do, it will be excellent every single time.
The most important thing I learned in my first job is that nothing is too menial to be done by you.
The best intern/externship experience was my time with Chef Michael Romano at Union Square Cafe, before the restaurant opened. I learned how to be a kind Chef from him.
