One of the hardest things I had to learn in this industry is that you are not buying wine for yourself, you are buying wine for your guests, so make smart decisions that will make your restaurant money.
Wine & culture go hand in hand: be open minded to new cultures, new people, new ideas and it will make you a better professional.
Be kind and respectful to others; you can't demand respect from anyone, it will come naturally.
Being a part of the opening team at Per Se taught me that sense of urgency is the most important tool in this industry.
Always move with a purpose.
Never burn a bridge, you never know when the roles will be reversed.
I always keep Tong magazine, a technical & insightful wine magazine in my back pocket. I also regularly listen to "I’ll drink to that" podcast, it has made me connect on a different level with winemakers.
Perception is reality, it keeps me in check everyday.
When hiring, I look for humbleness, willingness to learn from others, and well organized people with a great smile.
