Be extra versatile. There are many variables that can happen at any single service. One must be ready for anything.


EXPERIENCE
Managers need to manage and always listen to their team. A lot of time, that’s all it takes.
When hiring, I always look for someone who is personable, smiles and has a good attitude. I can teach them any of the technical parts of the business, I can’t teach them to be nice.
The core of our industry is based on hospitality. The most important skill you need is to be able to adapt to any situation and act on it.
What keeps me going is when I see my team smiling and having a good time. That energy also translates to our guests.
For self-cafe, I run on my days off, and I try new restaurants and bars. Since our restaurant is closed on Sundays, I try to leave my phone at home and disconnect. It helps that I don’t have social media.
I read a lot of fiction which helps me escape from the world from time to time. I also read books related to management, human behavior, and psychology.
We got lucky that we had an amazing leadership team when we opened the restaurant. They are the foundation and the pillars for what we have done at Santi.
