EXPERIENCE
One of the most valuable lessons I’ve learned is understanding how to use ingredients effectively. It's not just about knowing flavors, but appreciating the story behind them — their origins, seasonality, and how to showcase them at their best. Equally important is learning how to work with people. A kitchen thrives on teamwork, and the relationships you build with your coworkers are the foundation of a successful service. I've come to understand the importance of communication, respect, and mutual support in creating a positive and productive environment. These lessons have not only helped me grow as a chef but also as a leader, enabling me to foster collaboration and ensure the team works cohesively toward a common goal.
When hiring aspiring professionals, I first look for strong knife skills. A solid foundation in handling a knife efficiently and safely is essential in any kitchen. Beyond technical skills, I pay close attention to attitude. I want to see genuine motivation and excitement for working in the kitchen. This industry can be demanding, so enthusiasm and a willingness to learn are key to thriving in this environment. Ultimately, I look for individuals who are not only skilled, but also have the drive and passion to contribute to the team and embrace the challenges of the culinary world.
In my view, two critical skills are essential for success in my area of expertise: (1) the ability to ensure readiness before service and (2) maintaining operational efficiency during service. Preparation is the foundation of a smooth service. This includes not just having the kitchen fully prepped, but also ensuring that every element is in place. A well-prepared kitchen sets the stage for success. During service, operational efficiency becomes paramount. This means monitoring the flow of orders, ensuring dishes are executed with precision, and paying attention to table turnover times. Striking the balance between maintaining quality and keeping service moving is key to creating a great dining experience for our guests.
One of my favorite ways to take care of myself is by going fishing whenever I can. It’s a chance to step away from the demands of the kitchen and reconnect with nature. Fishing helps me disconnect from work, clear my mind, and recharge my energy.
I love watching nature documentaries and diving into research about the ocean and its ecosystem, particularly fish. Understanding fish — what they eat and where they live — fascinates me. It’s not just about curiosity; it also helps me plan differently depending on the fish I want to catch. This passion combines both pleasure and practicality. It fuels my appreciation for the natural world while also deepening my connection to ingredients that often feature in my culinary work. Exploring this subject inspires me both personally and professionally.
I strive to create an environment where my team truly enjoys working. A positive and supportive atmosphere is key to keeping everyone motivated and engaged. I’ve learned that everyone has their own way of learning and processing information. By understanding these differences and what makes sense to each individual, I can tailor my approach when sharing knowledge and skills. This personalized approach helps ensure that the team feels supported and empowered to grow. Ultimately, my goal is to foster a culture of collaboration and learning, where each team member feels inspired to contribute to our shared success.
