The biggest lesson I've learned so far is to put family first. Even when it seems the pressures of work tell you not to, you don't ever get time back
I look for good human beings first and foremost. Second, the passion has to be there. I believe having good culture starts with great people and the love for this craft.
I like to change the menu often, getting inspired by classics and flipping them into a more modern take. I think the team enjoys that too.
If I could give my younger self one piece of advice, it would be that it's ok to ask for help, inside the kitchen and outside.
You have to love this industry, you have to appreciate it and be a student at all stages. If you find that you really love it, work hard, never stop asking questions, and find the thing that gives you the most trouble and perfect that task.
