EDUCATION
When hiring aspiring professionals, I look for those who are flexible, have a strong work ethic, and pay attention to details. It is important for those looking to grow in their career to always act curious, ask questions, and be emotionally intelligent.
I find inspiration from other chefs like David Kinch, Paul Carmichael, Alexander Gauthier, and Sota Atsumi, as well as people who work in the arts such as Li-Young Lee, Alex Becarra, and Charlie White.
For self-care, I head to the gym at least three times a week.
I am always reading horror and sci-fi books. Some podcasts I enjoy are Rest is History, Fall of Civilizations, and The Rewatchables.
I strive to keep my team inspired by allowing them to try out new dishes and test their ideas with products and ingredients I introduce. Additionally, I encourage my team members to travel for industry events and share their interests, other than food & beverage.
