    Mixing and shaping various types and styles of bread in a high volume, fast paced setting. I was also tasked the role of lead baker, keeping track of the doughs and directing my co-workers on when to divide, rest, shape, and proof for baking the following morning. I also had to keep detailed records of mixing times, temperatures, and maintaining the levain.
