Pippin Hill Farm & Vineyards is an award-winning winery and event venue featuring distinctive wines and farm-to-table cuisine in the foothills of the Blue Ridge Mountains.

Pippin Hill seeks an experienced Sous Chef to join our back of house team. This role will support the Executive Chef in managing the Pippin Hill Farm & Vineyards kitchen staff. The ideal candidate will possess strong communication skills, both verbal and written, and demonstrate team leadership abilities. Must be able to delegate responsibilities, organize complex projects, and establish priorities in a fast-moving kitchen. Must be dependable, gracious, and above all a team player.

This position includes daytime prep for our tasting room menu as well as some evenings and weekends for our exclusive weddings and private events.

Responsibilities include:

  • Assist with creation and delivery of seasonal menus and dishes, including working with staff gardener to plan and utilize produce harvested from our kitchen garden. 
  • Assist with back of house staff supervision and take lead role in training line cooks, prep cooks, and stewards. 
  • Work with front of house staff to ensure understanding of dishes and ingredients. 
  • Organize and execute semi-monthly food inventories. 
  • Manage product ordering, tracking, and par value methodology. 
  • Participate in costing out of all new dishes and menus to hit food cost and contribution benchmarks. 
  • Assist Executive Chef in monitoring and maintaining food cost targets. 
  • Develop understanding of scheduling model for labor cost targets and forecasting, controlling overtime when necessary. 
  • Responsible for adhering to the Executive Chef’s guidelines in regards to kitchen cleanliness.
  • Experience with all kitchen stations to fill in if necessary. Able to take lead in the absence of Executive Chef.
  • Must be passionate about creating great food, self-motivated, and demonstrate a willingness to learn.

General Requirements:

  • Ability to stand for extended periods of time, 8 to 12 hours.
  • Be able to lift 50 pounds.
  • Knowledge of workplace safety procedures and protocols.
  • Familiarity with cloud-based POS, proficiency with Microsoft Excel.
  • SerfSafe certification a plus, will train if necessary.
