Adjoining Quince, Lindsay and Chef Michael Tusk’s celebrated Three Star Michelin restaurant, Cotogna (meaning ‘quince’ in Italian) offers a seasonally-changing menu featuring spit-roasted or grilled meats and game birds, wood-oven pizzas, house-made pastas, fresh local fish and seafood, salads, salumi and cheeses in the warm atmosphere of the restaurant’s refined urban design. A sophisticated, seasonal cocktail program features innovative, ingredient-driven cocktails with a very approachable all-Italian wine program.
Cotogna is looking for a skilled career-minded Executive Sous Chef in search of a rewarding and unique kitchen management position in the restaurant industry. The position entails daily mise-en-place, managing of labor, controlling inventories and implementing proper food storage and handling skills. Prior management experience is required.
An ideal candidate will have:
- A passion for cooking and possess a strong work ethic
- Strong communication skills with the ability to problem solve
- Experience with seasonally changing, regional Italian food and/or wood fired cooking
- 2-3 years’ experience at a comparable restaurant
