- 3-4 years of Chef/Exec. Chef experience in a high-volume kitchen
- The ability to run a chef-driven, "scratch" kitchen
- Strong working knowledge of BOH systems, ordering and inventory
- Knowledge of cutting-edge culinary trends/local dining scene
- Experience in setting up restaurants for day operations including kitchen ordering with the Chef
