Job Details

We are experienced retail professionals who are opening a new location for our concept store SPACE 519 where we are adding a 40-seat lunch cafe and all day coffee/pastry concession in April 2018 (we were slated to open last fall - but had construction delays). We have been traveling throughout the US and Europe looking at similar concepts and have a firm grasp on what the menu for this sit down lunch spot should be. However, we need a seasoned Culinary Professional to partner with to execute our vision. That individual will be 100% in charge of the Kitchen and Restaurant Operation and will have the opportunity to hire his/her own team from the ground up. There will be no dinner service - only occasional evening events. So this is a rare opportunity to helm a creative food program without the grueling hours dinner service requires. The kitchen will not have black iron - but will have all new state-of-the-art restaurant equipment including a ventless induction range and convection and steam ovens. The menu will be very seasonally driven - focusing on fresh organic locally sourced ingredients. It will consist largely of Creative Soups and Salads, Interesting Sandwiches, rotating Grain Bowls and Specials baked in a Staub Cassoulets, Plus Creative Weekend Brunch Offerings. We will also have a beer and wine license and seasonal sidewalk cafe seating. The right candidate will have multiple years of related restaurant experience and a collaborative attitude towards helping us execute our vision for the space. Position can begin in late January on a flexible part time consulting basis and will become full time in March.

SPACE 519 is a concept store in Chicago’s Gold Coast neighborhood, just off of the Magnificent Mile. Owners Lance Lawson and Jim Wetzel curate an assortment of unique and hard to find items across a broad range of categories. We focus on a finely edited assortment of women’s apparel and accessories, men’s accessories, green apothecary, inspired home goods, as well as unique books and gifts.

Within SPACE 519 is The Lunchroom, a 40-seat lunch and brunch restaurant, along with an all-day café, serving local favorite, Metric coffee, and pastries from acclaimed Evanston bakery, Hewn.

The Lunchroom features a vegetable-forward, California-inspired menu centered on globally-influenced entrees including soups, salads, sandwiches, fish tacos, grain bowls and other lunch and brunch dishes. With a focus on locally-sourced ingredients, the menu features classic dishes with a twist.
