Job Details

We are currently looking for an Executive Chef to run the kitchen of a small independent restaurant. We focus on European classics executed well and are looking for a Chef to take on the creation of dishes while maintaining the standards of quality. Knowledge of how wine and food work together is key for menu development as is an ability to work closely with the owner and general manager on the development of the program.

Income Tax is an intimate, 50-seat wine focused restaurant with an emphasis on food-friendly wine and wine-friendly food in Chicago’s Edgewater neighborhood. The team has hand-selected a wine list that focuses on a variety of old-world regions and producers with an agricultural mindset to represent regions both classic (Bordeaux, Burgundy, Piedmont) and lesser known (Saar, Beaujolais, Jura, Chinon). Chef Ryan Henderson has created a food menu that features his own interpretations of classic dishes from Spain, France, Italy and Germany; all a perfect complement to the regions represented by the restaurant’s wine program. The bar highlights a concise cocktail list as well as an exciting collection of spirits focused on brandy, eau de vie and other old world spirits. Income Tax is located at 5959 North Broadway Street. Hours of operation are Tuesday - Thursday, 5pm - 11pm, Friday - Saturday 5pm - 12am.

 

Duties: 
Developing and executing standard operating procedures 
Working with rotating ingredients and working with quality focused vendors for product 
Working with the owner and manager on menu creation 
Executing menu items and service 
Manage all kitchen employees with GM including scheduling, coaching and disciplining 
Ensure health code requirements are met

Skills & Requirements: 
3+ years of related experience 
Experience with back of house administrative and managerial duties a must 
Proven ability in teaching and mentoring kitchen employees 
Exceptional communication and supervisory skills 
Ability to demonstrate quick thinking and adaptability in a constantly changing environment
