At the Bindery, I want this to be the dominate response. I want people to leave feeling happy, satisfied, excited and anxious to come back because they feel the heartbeat of the kitchen, the staff, the space and the food. The Bindery Baker / Pastry Chefs must work hand in hand with our core team to create this feeling.
The Bakers will be integral to achieving these goals. They will help to create and maintain a company culture that brings the best people to this project. I want our staff to feel they are part of something unique and that they are proud to be a part of the Bindery family. The Bindery bakery has a slightly European feel in baked goods production and will redefine sweet through subtle nuances unlike any other bakery in Colorado. We strive to match tradition with creativity.Specifics and Primary Responsibilities: High-quality production of The Bindery’s bakery selections including but not limited to sweet and savory applications, fermented/soured breads, Italian cookies, tarts, morning buns, croissants, and other traditional European baked treats, all of which must uphold our standards and expectations for excellence in quality of food prepared, and total guest experience.
This is a high production environment that will give you an opportunity to be intimately involved with building the organization. Training in artisanal bread making and using naturally leavened, stone-milled local grains preferred. European pastry background is a plus. Exceptional planning and organizational skills, an acute attention to detail, and the ability to develop bread and pastry formulas are a must.
We expect our bakers to be experts in weighing and measuring ingredients, often in bulk; mixing, kneading and molding dough; pastry-making; and specialized decorating. They must know how to bake in a variety of ovens, including commercial, convection, rack, stone deck and revolution types. They also must be adept at using all commercial-bakery equipment, such as dough mixers, dough rollers and proofing cabinets. Our bakers must exercise quality control so products are consistent and of high quality.

We incorporate four distinct concepts: Eatery, market, bakery and catering, serving breakfast, lunch, and dinner for dining-in or taking-out. Like our European counterparts, The Bindery focuses on the craft of cooking, by combining the market and bakery with an elevated fine dining experience under the same roof. The marketplace will offer the best to-go food in the area, as well as small-batch house-made artisanal products. The café will serve up everything from unique baked goods and fine coffees to delicate desserts. The cuisine can be enjoyed in the eatery, or in the warmth of customers’ homes. For customers who want to dine in, special attention will be given to shared plates from an ingredient driven menu, in addition to the Market's daily take-out menu. A small selection of craft beers, wines and specialty cocktails will also be available. Located at the border between Denver’s Lower Highland and Lower Downtown at 1817 Central, The Bindery is reminding Denver locals that in our fast moving times, convenience should not exclude attention to detail, nor pride in food.
