It has always been my dream to open a tiny restaurant, where I’m able to cook with the very best of the season, and create an incredible menu that changes regularly. Named after my dear granny who opened my eyes to cooking and food, Maude is the realization of my dream.
Each month a single ingredient inspires a menu of nine tasting plates, and this celebrated ingredient is creatively woven, to varying degrees, through each course. Some courses call for the hero to be at the center of the plate whilst at other times, it plays a supporting role to the rest of the produce and proteins making up the dish. By choosing a special ingredient to star in each course, from first bites right through to our petit fours, a beautiful challenge is born!
Our market driven, prix-fixe menu is designed to create an intimate chef’s table experience for my entire dining room of 25 seats, where every seat is within a comfortable distance to our open kitchen. All of the most incredible dining experiences I’ve been fortunate enough to enjoy, take place at my mates’ restaurants where they take the menu away, deliver a glass of champagne to the table, and away we go... course after course, I’m pleasantly surprised by the tasting plates that make it to my table. I’m excited to have the opportunity to share this experience with each of my guests at Maude.
