Job Details

The publican pastry department is looking for a pastry cook- we make the desserts for The Publican, Publican Quality Meats, and Publican Anker. Cooks will rotate through a variety of positions learning everything from plating, to production along side a super fun team of dedicated pastry professionals. We love our farmers and strive to use the best of what's grown and harvested around us in our desserts, like a white cornmeal blueberry cookie with corn milled the same week, sorghum peanut butter cookies with Sorghum from northern Kentucky, and raspberry sherbet wtih farmers market berries.

From the team that created Blackbird and avec restaurants, The Publican is a beer-focused restaurant located at 837 W. Fulton Market in Chicago. Executive Chef Paul Kahan and Chef de Cuisine Jacob Saben craft an eclectic menu inspired by simple farmhouse fare in a space evocative of a European beer hall. Designed by James Beard Award-Winner Thomas Schlesser, The Publican features the same simple lines and strong design elements that made the architect’s long-time partnership with Design Project Manager/Partner Donnie Madia so successful.
