Lead Line Cook

San Pedro Inn is a Mexican restaurant and bar in Red Hook, Brooklyn, serving home-made Mexican food alongside a full bar program. We're looking for a Lead Line Cook who takes pride in consistency, speed, and clean technique — and who works well as part of a tight kitchen team.

The Lead Line Cook runs a station (or stations) during service, sets the pace on the line, and helps keep the kitchen organized and prepped for a busy night. This is a hands-on leadership role — you'll be cooking every shift, but also setting the standard for other cooks on the line.

• Run assigned station(s) during service, maintaining speed, consistency, and plate quality
• Execute recipes and techniques to spec — sauces, salsas, proteins, and traditional Mexican preparations
• Complete daily prep lists and manage mise en place for your station and the shift ahead
• Help train and support other line cooks; set the tone for pace and cleanliness during service
• Communicate clearly with the pass, expo, and kitchen leadership during rushes
• Maintain a clean, organized, and safe station — follow all food safety and sanitation standards
• Monitor food costs and portioning; flag waste or inventory issues to the kitchen manager
• Step in on other stations as needed — this is a team kitchen, not a solo one

• 2+ years of line cook experience, ideally in a high-volume or full-service restaurant
• Experience with Mexican cuisine or a genuine interest in learning traditional technique
• Strong knife skills and comfort working multiple stations
• Calm under pressure — someone who keeps their head during a slammed Friday night
• A true team player: helps out where needed, communicates well, no ego at the pass
• Available for full-time hours, including nights, weekends, and holidays
• Food handler's certification (or willingness to obtain one)
