Bread Baker Shift Supervisor

WINNER is a Brooklyn-based hospitality group known for thoughtful food, excellent bread and pastry, and warm, neighborhood-driven hospitality. With our bakery and growing collection of restaurants, cafés, and retail locations - including our new flagship at The Alloy Block in Downtown Brooklyn - we’re continuing to build an exceptional culinary team.

We’re looking for a Bread Baker Shift Supervisor to join our bakery team and help lead daily bread production.

This is a hands-on leadership position for an experienced baker who loves both the craft and the people side of baking. You’ll work alongside our bread team while leading production on your assigned shift, ensuring that our breads are consistently excellent, production stays on schedule, and the bakery runs safely and efficiently.

You’ll be responsible for:

• Leading and supporting Bread Bakers during your assigned shift
• Executing and overseeing daily production, including sourdough, baguettes, focaccia, ciabatta, pretzels, rolls, pizza dough, and other specialty breads
• Maintaining high standards for fermentation, shaping, proofing, baking, and finished product quality
• Organizing production priorities and keeping the team on pace to meet daily pars
• Coaching and developing Bread Bakers through hands-on training and feedback
• Supporting scheduling, staffing, ordering, inventory, and receiving
• Maintaining strong food safety, sanitation, and workplace safety standards
• Troubleshooting production, equipment, and staffing issues and communicating effectively with bakery leadership
• Helping improve systems, workflow, consistency, and overall bakery operations

• Professional bread-baking experience in a high-volume bakery or restaurant environment
• Strong understanding of fermentation and bread production
• Previous lead or supervisory experience preferred
• Excellent organization and time management
• A strong eye for quality and consistency
• A collaborative leadership style and ability to coach others
• Someone who is calm under pressure, solutions-oriented, and takes ownership
