Le Sixth is a high-end French bistro recently opened in the heart of the West Village by a four-
time Michelin-starred chef debuting his first restaurant in New York City. A deeply personal
project, Le Sixth brings the chef’s fine-dining pedigree into an approachable neighborhood
setting. Located on Sixth Avenue at Washington Place, the restaurant is conceived as a love
letter to classic French bistro culture — pairing the refinement of fine dining with the warmth and
familiarity of a neighborhood establishment. Guests can expect timeless French cuisine served
in an intimate downtown setting.
In cooperation with the General Manager, we are looking for a Head Bartender to help build and run the bar program from the ground up.
Role Overview
- Be on the service team behind the bar and lead by example in all areas of bartending and guest service
- Design and maintain a balanced, profitable, and seasonal cocktail menu
- Train and mentor bartenders & barbacks
- Oversee prep systems, par levels, and ordering
- Work with ownership/management on costing and inventory
- Build and update specs, prep lists, and SOPs for all bar items

Lead the bar during service:

Set the pace, standard, and tone every shift

Ensure all cocktails are to spec, consistent, and on time

Train and coach bar team:

Run tastings, technique sessions, and menu education

Give clear, constructive feedback and support growth

Partner with General Manager to:

Align service standards between bar and floor

Keep communication tight during busy service

Handle guest issues with calm, hospitality-first judgment
- Maintain DOH and safety standards:
What We’re Looking For

5+ years in hospitality (restaurants, bars, hotels), with at least
3+ years behind the bar in busy, cocktail-forward environments

Proven experience developing cocktail programs:

Experience training bartenders and barbacks:

Solid grasp of:

Classic cocktails & spirits

Prep workflows and batching
-
Basic inventory, ordering, and cost awareness

Organized, reliable, and calm under pressure

Professional communication with owners, managers, and teammates
- Night and weekend availability (holidays as needed)
Nice to have (but not required):
- Experience with French Spirits
- Sommelier Experience
- Interest in low-ABV, N/A, and food-pairing cocktail design
- Basic comfort with spreadsheets/POS reports for inventory & costing
