About Who We Are
Wallace is a brand new neighborhood wine bar joining the community along Vanderbilt Avenue in Prospect Heights, just walking distance from Prospect Park. Our goal is to democratize wine with an extensive wines by the glass program that allows guests the ability to try and explore new wines within our approachable and affordable list. Our food program will reflect this philosophy also, showcasing a curated menu of thoughtful dishes designed to compliment and partner up with a few glasses, a cocktail or bottle of wine. No fuss, just good wine and tasty food.
Who We’re Looking For
We’re looking for an enthusiastic, professional cook with managerial experience to manage and operate our small wine bar’s kitchen. Our petite kitchen is all electric and intended to produce a curated menu of rotating small plates, largely centered around charcuterie and cheese boards.
You must have the ability and willingness to work solo, including prep, and uphold food and safety standards set forth by the DOH. Experience working in electrical and open kitchens within small teams is preferred. While you’ll be expected to take direction and follow instructions from management, candidates with initiative and the ability to work independently are encouraged to apply.
The job requires cooking and prep but importantly also requires the management and implementation of kitchen systems and operations. This is an opportunity for cooks with managerial experience to step into an independent role and run a small team and kitchen.

Key Responsibilities
- Inventory management, waste management and ordering
- Staff scheduling and training
- Culinary Skills: understanding cooking techniques, flavors, seasoning and food preparation methods.
- Food Safety: Knowledge of food handling and food safety protocols.
- Cleanliness and station management: Set up and keep a clean, organized station and kitchen environment.
- Communication and Collaboration: must have the ability to listen and communicate effectively with other staff.
- Time Management: must be punctual and reliable, and be able to keep pace with orders.
- It’s important you have the stamina and ability to work eight hour shifts, standing for long periods of time and maneuvering in a small, shared space.
- Must have food handler's certificate
- Have a good attitude and present a positive front - you will be working in an open kitchen!
