The Chef de Cuisine at The Quoin Hotel is responsible for shaping and executing the culinary vision across all outlets, driving both creative excellence and strong financial performance. - The Quoin Restaurant delivers wood-fired Northern Italian and Mediterranean-inspired cuisine in a refined yet lively setting, centered around bold flavors, thoughtful sourcing, and a curated wine program.
- Simmer Down, the hotel’s moody, speakeasy-style lounge set within a historic bank vault, offers bespoke cocktails and an intimate late-night atmosphere paired with elevated small plates.
- The Quoin Rooftop Bar & Lounge provides panoramic city views with chic, fireside fare and vibrant cocktail service — a high-energy yet polished social destination.
- Private Dining & Events range from curated chef-led dinners to weddings, buyouts, and corporate gatherings, requiring seamless execution and customized menu development.

Key ResponsibilitiesCulinary Leadership
- Lead, mentor, and develop a high-performing culinary team
- Oversee menu creation, seasonal transitions, and concept evolution across all outlets
- Maintain consistent quality, presentation, and guest satisfaction
- Full ownership of culinary P&L performance
- Drive food cost control, labor management, and inventory optimization
- Implement menu engineering strategies to maximize margin
- Forecast revenue and collaborate with hotel leadership on budgeting and strategic planning
- Design scalable, profitable menus for weddings, social events, and corporate functions
- Partner closely with sales and events teams to grow revenue
- Oversee flawless execution of high-touch, boutique events
- Ensure all culinary offerings reflect Method Co.’s design-forward, experiential philosophy
- Collaborate with marketing and leadership teams on activations, chef dinners, and special programming
- Contribute to the continued evolution of The Quoin’s culinary reputation in the Wilmington market
- 5+ years in a senior culinary leadership role within luxury hotels or high-end restaurants
- Experience overseeing multiple outlets with distinct concepts
- Strong financial literacy (P&L ownership, forecasting, cost controls)
- Extensive banquet and private event experience
- Polished leadership style with a hands-on approach
- Ability to thrive in a boutique, high-touch hospitality environment
- Profitable, well-run culinary operations across all outlets
