Sommelier – Opening Team
Indienne New York | Spring Opening

Chef Sujan Sarkar’s Michelin-starred tasting menu concept, Indienne Chicago, is opening in New York City this spring. We are building a disciplined, hospitality-driven opening team of front-of-house professionals committed to excellence and consistency at the highest level of service.

The Sommelier is a hands-on leadership role within the dining room, working closely with the General Manager and both FOH and BOH teams. This position is responsible for shaping and executing a wine program that reflects the culinary philosophy of Indienne, while ensuring service is delivered with precision, clarity, and intention.

This is not a passive beverage role—it is an active service position rooted in hospitality, education, and operational discipline. The ideal candidate is curious, consistent, and deeply committed to guest experience over ego or credentialism.

As Indienne New York grows, this role is designed to evolve into a Wine Director position overseeing three locations, contributing to the long-term structure and direction of the beverage program across the group.

Key Responsibilities

Wine Program & Development

  • Curate and maintain a focused wine list aligned with the restaurant’s culinary direction and service philosophy
  • Continuously refine selections to reflect seasonality, balance, and guest experience
  • Maintain profitability targets while preserving integrity of the program
  • Oversee physical and digital beverage menus

Service Execution

  • Deliver precise, thoughtful, and guest-centered wine service
  • Guide pairings that enhance the tasting menu experience
  • Support FOH team during service to ensure consistency and flow
  • Uphold Michelin-level standards of timing, detail, and communication

Staff Training & Education

  • Lead ongoing beverage education for FOH and service teams
  • Train staff on product knowledge, pronunciation, origin, grape varietals, and pairing logic
  • Ensure all updates to the list are clearly communicated and integrated into service
  • Develop a culture of confidence and consistency in wine service across the team

Inventory & Operations

  • Manage beverage inventory, ordering, and stock organization
  • Verify deliveries and invoices with accuracy and accountability
  • Maintain POS updates, pricing accuracy, and perpetual inventory systems
  • Ensure proper storage, organization, and security of all beverage products
  • Conduct regular inventory in coordination with management and bar team

General Service Support

  • Assist with guest engagement and wine recommendations during service
  • Support FOH and bar teams in maintaining seamless beverage execution
  • Participate in daily operational needs as required to ensure service excellence

Qualifications

  • 2–3 years of experience in a fine dining or Michelin-level environment
  • Strong and confident knowledge of wine, regions, varietals, and pairings
  • Highly developed sense of hospitality and guest interaction
  • Ability to work with precision in a structured, high-performance service environment
  • Strong communication skills and team-first mindset
  • Commitment to consistency, organization, and continuous learning
  • Impeccable grooming and adherence to professional standards

About the Role

We are building a beverage program with intention—focused on balance, harmony, and meaningful pairing that enhances the guest experience and reflects the cuisine of Indienne.

This is a small, hands-on opening team with high expectations across all positions. We are not seeking résumé-driven applicants, but individuals who value craft, discipline, and long-term growth within a serious hospitality program.

Growth Path

This position is structured with a clear trajectory toward Wine Director overseeing three ABV HOSPITALITY locations, as the group expands. The expectation is long-term development, leadership growth, and program ownership.


Compensation Details

Compensation: Salary ($70,000.00 - $85,000.00) plus tips

Rooted in the regional diversity of the Indian subcontinent, Indienne is a progressive Indian fine dining restaurant inspired by the idea of cultural dialogue. Through a contemporary tasting menu format, the dining experience explores identity, memory, and craftsmanship by blending classical Indian flavors with refined European technique.

Originally from Kolkata, Chef Sujan Sarkar has become one of the leading voices shaping contemporary Indian cuisine in America today. Drawing on a global career that includes time in some of London’s most acclaimed Michelin-starred kitchens, Sarkar approaches Indian cuisine with both cultural understanding and a globally informed perspective. Across his growing collection of restaurants, his work explores the depth and regional diversity of the Indian subcontinent while reimagining how Indian cuisine can exist within the modern fine dining landscape.

We offer three seasonal 9-course tasting menus: Non-Vegetarian, Vegetarian, and Vegan.

Indienne in Chicago earned its first Michelin star in 2023 and has retained the distinction each year since. Our team looks forward to guiding guests through a dining experience that balances artistry with warmth, generosity, and thoughtful hospitality.
