Position Overview:
This is for a hybrid Sommelier / Server role who will work in both positions throughout the week.
We are looking for a passionate and enthusiastic Sommelier / Server with a strong work ethic and an endless curiosity to learn and grow with our restaurant.
Sommelier responsibilities include (but are not limited to):
- Beverage station setup/breakdown, maintaining stock of all beverages according to service needs, and ensuring the team is well-prepared to execute a successful service.
- Responsible for serving guests and helping to orchestrate the flow of dining room service - Sommeliers at the Atoboy will be an integral part in curating a memorable dining experience for all our guests.
- Having wine conversations of varying depths with our guests, guiding them through our list, in a polished and poised manner.
- Work together with the service staff and kitchen leadership to conduct seamless and refined wine service for tables.
- Assist with service needs while on the floor (e.g. running food, running beverages from bar, clearing and re-miseing tables, etc.).
- Assist in managing the day-to-day needs of the beverage program (POS management, communicating ordering needs, stocking, menu updates, timely staff updates, etc.).
- Assist with weekly inventory and ordering.
- Maintain proper glassware inventory and breakage logs.
- Assist with inventory audits at the close of each financial period.
- Assist with the creation and implementation of wine training for new hires and continued education for existing staff members - testing regularly to check for understanding and structuring classes and tastings to encourage high engagement levels.
- Expected to be constantly growing, learning, and expanding their knowledge base.
Server responsibilities include (but are not limited to):
- Greet guests, spiel, take orders
- Input POS orders with accuracy and detail
- Maintain mise, water, silverware, and glassware
- Mastery of food menu knowledge, including dietary accommodations
- Lead communication for allergies, celebrations, and accommodations
- Payment processing (GC, split checks, prepay)
- Beverage: BTG, beer, and sool with pairing accommodations made by server
- Beverage: BTB service
- Build guest rapport, share any pertinent information with host team to be entered into Resy
- Delegate to SA / Food Runner and maintain section flow
- Complete all checklists: open, close, detail
- In addition to primary Server responsibilities, this role includes the following ongoing sidework as secondary priorities:
- Tray maintenance
- Restocking service stations and glassware
- Refilling water carafes
- Maintaining the back service station
- Preparing mise for the next course
Physical Requirements:
- Ability to lift up to 20 - 30 lbs if necessary
- Safely and effectively use all necessary tools and equipment
- Stand and walk for an entire shift, including moving safely through all areas of the restaurant
