Job Details

Summary: The Line Cook is responsible for preparing high-quality Asian-inspired dishes in a timely and efficient manner, ensuring the kitchen operates smoothly and meets the culinary standards of the restaurant. Working under the direction of the culinary management team, you play a vital role in delivering an authentic and memorable dining experience rooted in Asian flavors and techniques.

Responsibilities:

  • Execute the preparation of menu items according to established recipes, portion sizes, and presentation standards specific to the restaurant’s Asian cuisine concept.
  • Prepare and handle traditional Asian ingredients such as fresh herbs, spices, noodles, rice, seafood, specialty sauces, marinades, and proteins.
  • Properly clean, cut, marinate, and portion ingredients using traditional techniques (e.g., velveting, brining, fermenting, sauce preparation).
  • Utilize cooking methods such as stir-frying, steaming, braising, grilling, deep-frying, roasting, and noodle/rice preparation to achieve authentic flavors and textures.
  • Demonstrate proficiency in high-heat stations and maintain proper timing during peak service.
  • Monitor and regulate cooking temperatures to ensure consistency, proper texture, and food safety.
  • Prepare stocks, broths, sauces, and condiments foundational to Asian cuisine (e.g., curry bases, soy-based sauces, chili oils, reductions).
  • Maintain knife precision for vegetable cuts, protein fabrication, and garnishes consistent with Asian presentation standards.
  • Ensure proper storage and rotation of specialty ingredients, including seafood and perishable produce.
  • Adhere strictly to food safety, sanitation, and DOH guidelines while maintaining a clean and organized workstation.
  • Manage multiple orders simultaneously in a fast-paced service environment while maintaining quality and authenticity.
  • Coordinate with fellow cooks to ensure timely order execution.
  • Conduct taste checks to ensure dishes meet standards for seasoning, balance (sweet, salty, sour, spicy, umami), and presentation.
  • Assist with prep work, station setup, breakdown, and cleaning duties as needed.
  • Demonstrate flexibility to work various stations.
  • Adapt to seasonal menu changes, specials, and evolving culinary techniques.

Must Haves:

  • Previous experience as a line cook in a restaurant, Asian or fusion concept preferred.
  • Strong knife skills and understanding of ingredient preparation specific to Asian cuisine.
  • Knowledge of traditional sauces, marinades, and flavor profiles.
  • Ability to work efficiently in a high-volume, fast-paced kitchen.
  • Strong attention to detail in plating and consistency.
  • Knowledge of food safety and health regulations.
  • Team-oriented mindset with clear communication skills.
  • Ability to stand and walk for extended periods.
  • Ability to work flexible hours, including evenings, weekends, and holidays.
