Job Details

As a Dumpling Prep / Trainee, you are part of the heart of the Din Tai Fung kitchen. In this role, you prepare, assemble, fold, and steam the dumplings that our guests know and love. Working in our show kitchen, you’ll help showcase the star of our menu while playing a key role on the kitchen team and in the overall guest experience.


Dumpling Prep / Trainees are responsible for preparing dumplings from start to finish. This includes measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings, while ensuring proper meat and allergen identifiers are added. You’ll also help maintain a clean and organized dumpling room, label items according to procedures and regulations, and participate in monthly staff and dumpling meetings as part of your development.

PAY RATE FOR DUMPLING PREP: $24.50 per hour


TRAINING EXPECTATIONS: 

Your journey at Din Tai Fung will begin as a Dumpling Trainee. Our hands-on dumpling training program is designed to provide you with the skills and knowledge you need to ensure you have the tools for success. Upon completion of the program, graduates will transition into the Dumpling Prep role. You can learn more about this program during your interview process.

SUPPORTING FUNCTIONS: 

  • Keeps all kitchen areas clean and sanitized 
  • Organizes items within the walk-in coolers and freezers
  • Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds) 
  • Assists with regular deep cleaning of the kitchen
  • Maintains confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“)

JOB REQUIREMENTS FOR DUMPLING PREP:

We are searching for friendly, energetic, highly motivated people who will thrive in a fast-paced, team-oriented environment

  • Dumpling experience is not required
  • Experience in prep, specifically with dough (pastry, pizza, etc.) is a plus
  • Open Availability 
  • Eager to learn, enjoys to be challenged 
  • Ability to stand for long periods of time

The story of Din Tai Fung dates back to 1958 when it was originally founded as a cooking oil retail shop in Taipei, Taiwan by Bing-Yi Yang and his wife, Pen-Mei Lai.

In 1972, the couple dedicated half of their shop to making and selling Xiao Long Bao. The Xiao Long Bao became so popular that Mr. Yang phased out the oil business, turning Din Tai Fung into the full-fledged restaurant it is today. Since its founding, Din Tai Fung has become synonymous with quality, consistency, and warm hospitality. With a menu boasting far more than just Xiao Long Bao, the brand has won many accolades, including the coveted Michelin Star five times at its Hong Kong branch, and has introduced a taste of authentic Taiwanese cuisine to 13 countries, including the United States, Japan, South Korea, Singapore, China, Hong Kong, Indonesia, Malaysia, Australia, Europe, and Thailand.
