Gus and Marty’s is seeking an experienced and motivated Chef de Cuisine to lead the kitchen at our modern Greek restaurant in Williamsburg, Brooklyn.
Gus and Marty’s blends traditional Greek flavors with a contemporary approach, focusing on seasonality, high-quality ingredients, and thoughtful hospitality. The Chef de Cuisine will play a key role in maintaining the quality and consistency of the menu while supporting ongoing culinary development in collaboration with ownership.
We are looking for a strong leader who is organized, calm under pressure, and passionate about building a positive kitchen culture.
Kitchen Leadership
- Lead daily kitchen operations and service execution
- Ensure consistency, quality, and presentation of all dishes
- Maintain high standards for prep, organization, and cleanliness
- Uphold food safety and DOH compliance standards
Team Management
- Supervise, train, and develop kitchen staff
- Foster a professional, respectful, and team-oriented environment
- Create clear prep lists and manage kitchen workflow
- Collaborate closely with front-of-house leadership
Menu & Product
- Execute the current menu with precision and consistency
- Contribute to seasonal menu updates and specials
- Maintain strong understanding of Greek and Mediterranean cuisine
- Ensure proper product handling and ingredient quality
Operations
- Manage ordering and maintain relationships with purveyors
- Monitor inventory and maintain pars
- Support food cost targets and minimize waste
- Assist with scheduling and labor management as needed
Qualifications
- 2–5+ years experience in a leadership kitchen role (Sous Chef or Chef de Cuisine)
- Strong organizational and communication skills
- Experience managing inventory and food cost
- Ability to lead a team while maintaining a collaborative environment
- Passion for seasonal cooking and Mediterranean flavors
- NYC Food Protection Certificate preferred
- Experience in high-quality, fast-paced restaurants preferred
