Who We Are
Wallace is a brand new neighborhood wine bar joining the community along Vanderbilt Avenue in Prospect Heights, just walking distance from Prospect Park. Our goal is to democratize wine with an extensive wines by the glass program that allows guests the ability to try and explore new wines within our approachable and affordable list. Our food program will reflect this philosophy also, showcasing a curated menu of thoughtful dishes designed to compliment and partner up with a few glasses, a cocktail or two, or bottle of wine. No fuss, just good wine and tasty food.
Who We’re Looking For
We’re looking for two enthusiastic, professional cooks to make up our small but mighty kitchen team, working under the direction and guidance of our Executive Chef. Our petite kitchen is all electric, producing a small plates menu of ten to twelve dishes. It is important that candidates are adaptable, to thrive in a dynamic kitchen opening. While skill and experience is important, we also value character and an eagerness to work and learn.
You must have the ability and willingness to work all stations, including prep, according to recipes and food handling standards set forth by our Executive Chef. Experience working in electric and open kitchens, within small teams is preferred. While you’ll be expected to take direction and follow instructions, candidates with initiative and the ability to work independently are encouraged to apply. Also our menu will have raw bar elements so fish handling and oyster shucking are must-have skills!

Key Responsibilities
- Basic Culinary Skills: understanding cooking techniques, flavors, seasoning and food preparation methods.
- Oyster Shucking: the ability to shuck quickly and safely.
- Food Safety: Knowledge of food handling and food safety protocols.
- Cleanliness and station management: Set up and keep a clean, organized station and kitchen environment.
- Communication and Collaboration: must have the ability to listen and communicate effectively with other staff.
- Time Management: must be punctual and reliable, and be able to keep pace with orders.
- It’s important you have the stamina and ability to work eight hour shifts, standing for long periods of time and maneuvering in a small, shared space.
