Omakase Sushi Chef — Shiraz Kitchen, White Plains

Shiraz Kitchen is reintroducing its sushi bar, and we are looking for the chef who will lead it.

This is a Persian-Mediterranean restaurant with a MICHELIN Bib Gourmand, a Wine Spectator Award of Excellence, and a New York Times Very Good rating. We have spent ten years building a room where hospitality, sourcing, and craft are taken seriously. The sushi program is the next chapter, and we want a chef who treats it as their own.

Compensation

  • $1,500/week base, with room above for the right experience
  • Full-time, stable schedule, long-term role

What you would own

  • The omakase progression and daily sushi menu
  • Sourcing, aging, and butchery decisions
  • The counter itself: pace, presence, guest experience
  • Collaboration with ownership on seasonal direction and menu growth

Who we are looking for

  • Proven omakase experience
  • Deep knowledge of fish: selection, aging, butchery, knife work
  • Disciplined, consistent, calm under service
  • Takes pride in every piece that leaves the board
  • Wants a long-term home, not a stop
