We are seeking a highly skilled Senior Sous Chef to join our culinary leadership team — a disciplined, passionate professional who understands excellence at scale and thrives in a high-performance, fine-dining environment.
Position Overview
The Senior Sous Chef serves as a key operational leader and culinary authority within the kitchen. This role acts as the Executive Chef’s right hand and is fully capable of leading service, protecting the integrity of proprietary recipes, and upholding the refined standards that define Crustacean Beverly Hills. They are hands-on and do not shy away from jumping on the line if needed.
This role requires both artistry and structure — someone who can execute with precision while managing a large team in a fast-paced, luxury setting.
Key Responsibilities
Culinary Leadership
Lead daily BOH operations and oversee high-volume dinner service
Act as Chef-in-Charge in the absence of the Executive Chef
Ensure strict adherence to proprietary recipes and plating standards
Conduct quality control tastings and maintain consistency across all services
Team Management
Supervise Sous Chefs, Line Cooks, and Prep Team
Maintain discipline, morale, and professional standards
Train and mentor team members in technique and execution
Lead by example during high-pressure service
Operational Excellence
Assist in managing food cost targets and inventory control
Oversee ordering, receiving, and vendor quality standards
Monitor waste, yields, and portion control
Support labor scheduling and productivity benchmarks
Standards & Compliance
Ensure full compliance with sanitation, health, and safety regulations
Uphold House of AN standards in presentation, taste, and professionalism
Qualifications
6–10+ years progressive culinary experience
Minimum 2–4 years in a senior Sous Chef or leadership role
Fine-dining or luxury hospitality experience required
Strong financial literacy in food and labor cost management
Exceptional organizational and communication skills
Calm, decisive leadership under pressure
