Gilda is a chef-driven Basque tavern located in West Town. We operate a focused, dinner-only service within a disciplined footprint. The kitchen is precise, collaborative, and deeply ingredient-driven.
We are seeking a Chef de Partie (Station Chef) to take full ownership of a station.
This is a station ownership role.
Role Overview
Each Chef de Partie at Gilda is responsible for the complete execution of an assigned station. Each station is treated as an independent domain of responsibility.
You will report directly to the Chef Partners.
Responsibilities

Full ownership of assigned station

Daily mise en place planning and execution

Prep organization and station cleanliness

Execution during live dinner service

Waste control and product utilization

Inventory tracking for station

Maintaining station SOP documentation

Supporting tasting menu and a la carte execution

Collaboration with other stations during service

Qualifications

3+ years professional kitchen experience preferred

Strong foundational technique

Ability to execute consistently under pressure

Clean work habits and disciplined organization

Emotional steadiness during service

Interest in Basque and globally influenced techniques
Experience with fermentation, curing, or wood-fire techniques is a plus but not required.

Compensation
Competitive hourly compensation based on experience.
Eligible for tip pool participation in accordance with Illinois law.
Full-time positions available.
Schedule
Dinner-only service, 5-10, 5-midnight on Friday and Saturday
Five nights per week.
Closed Tuesdays and Wednesdays.
