Chef de Partie

A Pasta Bar is a modern Italian restaurant rooted in quality, technique and atmosphere. We are expanding to Miami and are building a disciplined, professional kitchen team with strong standards and high execution.

We are looking for a skilled Grill Chef with experience handling high-quality meats, precise temperature control, and clean station management.

The Grill Chef is responsible for the preparation, cooking, and presentation of all grilled and meat-based dishes in accordance with company recipes and quality standards.

This role requires strong technical skill, consistency under pressure, and respect for brigade structure.

• Execute all meat and grill items to specification and plating standards

• Control cooking temperatures and resting times with precision

• Maintain mise en place and station organization at all times

• Ensure proper labeling, rotation, and storage (FIFO compliance)

• Monitor meat yields and minimize waste

• Assist in butchery as needed

• Maintain sanitation standards in compliance with Florida Department of Health regulations

• Work efficiently during high-volume service

• Collaborate with pasta stations

• Minimum 3 years experience in a high-volume or fine-casual restaurant

• Strong knowledge of meat cookery and temperature control

• Ability to work wood-fire, gas grill, or broiler preferred

• Understanding of food cost and portion control

• Professional communication skills
