Sushi Cook

Summary: The Sushi Line Cook is responsible for preparing high-quality Asian-inspired and sushi-focused dishes in a timely and efficient manner, ensuring the kitchen operates smoothly while meeting the culinary standards of the restaurant. Working under the direction of the culinary management team, you play a vital role in executing hand rolls, sushi preparations, and seafood production while delivering an authentic and memorable dining experience rooted in Asian flavors, precision, and technique.

Responsibilities:

• Execute the preparation of menu items according to established recipes, portion sizes, and presentation standards specific to the restaurant’s Asian and sushi-focused cuisine concept.
• Prepare and handle traditional Asian ingredients including sushi rice, seafood, fresh herbs, specialty sauces, marinades, and proteins.
• Properly clean, slice, portion, and prepare raw fish and seafood according to house standards and food safety guidelines.
• Execute hand rolls, sushi items, and cold station preparations with consistency and attention to detail during service.
• Maintain proper sushi rice preparation, seasoning, temperature control, and holding standards throughout service.
• Utilize traditional preparation techniques including marinating, curing, sauce preparation, and seafood fabrication.
• Demonstrate proficiency in both cold and hot kitchen stations while maintaining proper timing during peak service periods.
• Maintain knife precision for vegetable cuts, seafood slicing, protein fabrication, and garnishes consistent with Asian presentation standards.
• Monitor product freshness and ensure proper storage, labeling, and rotation of seafood and perishable ingredients.
• Maintain strict adherence to food safety, sanitation, and DOH guidelines, particularly regarding raw seafood handling.
• Manage multiple orders simultaneously in a fast-paced service environment while maintaining quality and consistency.
• Coordinate with fellow cooks and culinary leadership to ensure timely and accurate order execution.
• Conduct taste and quality checks to ensure dishes meet standards for seasoning, balance (sweet, salty, sour, spicy, umami), texture, and presentation.
• Assist with prep work, station setup, breakdown, and cleaning duties as required.
• Demonstrate flexibility to work across stations as business needs evolve.
• Adapt to seasonal menu updates, specials, and evolving culinary techniques.

Must Haves:

• Previous experience as a line cook or sushi cook in a restaurant environment; Asian or sushi concept preferred.
• Strong knife skills, including experience slicing fish or handling seafood.
• Understanding of sushi rice preparation and raw ingredient handling preferred.
• Knowledge of traditional Asian sauces, marinades, and flavor profiles.
• Ability to work efficiently in a high-volume, fast-paced kitchen environment.
• Strong attention to detail in plating, rolling technique, and consistency.
• Knowledge of food safety, sanitation, and health regulations.
• Team-oriented mindset with strong communication skills.
• Ability to stand and walk for extended periods.
• Ability to work flexible hours including evenings, weekends, and holidays.
