RESPONSIBILITIES:
- Responsible for supporting Executive Chef in overseeing menu and production for the pastry department
- Must ensure quality, consistency, cost, employee relations and all other related tasks as it pertains to the pastry department with the goal of hitting food and labor cost target, as well as maintaining guest satisfaction in regards to consistency and cleanliness of the department.
- Complete mise en place list in the time allotted, making sure all sections are ready for each service
- Acquire recipe knowledge and section setup to smoothly execute service
- Ensure all items on station are properly stored, labeled and dated
- Responsible for setting up own station and help others if needed
- Responsible for time management, efficiency and station organization
- Prepare all food products according to the prescribed methods, both during service and prior preparation
- Follow all internal and state regulations such as DOH/Food & safety/HACCP/Beverage
REQUIREMENTS:
- Have expert level knowledge of pastry technique including principles of baking.
- Ability to multi-task and work under pressure in a high-volume, fast-paced environment
- Ability to interact positively with supervisor, colleagues, and employees, as well as the public in a guest facing capacity with professionalism
- Ability to successfully use food costing system Foodager, create legible recipes, and supply all new recipes to purchasing before rolling them out in service
- Produce a high volume of work in a timely manner
- Be aware of city, state, and federal labor laws that may impact compliance of the business and the interaction between manager and hourly employee
- Ability to lead, train, and motivate a team
- Be organized, and upkeep all company collateral at the highest level
- Must be able to lift up to 50 pounds
- Must be able to work standing and walking for extended periods of time

Compensation Details
Compensation: Salary ($90,000.00 - $105,000.00)
