General Overview:

The Pastry Chef is responsible for producing, baking, and creating high-quality breads, pastries, and baked goods in line with Chama Mama’s culinary standards. This role combines technical baking expertise with product development, requiring creativity, consistency, and a strong understanding of dough fermentation, pastry techniques, and flavor balance. The position supports daily production, commissary & bakery needs, and new product development.

General Duties & Responsibilities:

  • Prepare, bake, and produce a variety of breads, pastries, and baked goods according to standardized recipes and production schedules.
  • Create and develop new bread and pastry products, including testing, refining, and documenting recipes in collaboration with Culinary Lab.
  • Participate in R&D sessions for new menu items, seasonal offerings, and special projects.
  • Handle dough preparation, fermentation, shaping, proofing, and baking with precision and consistency.
  • Accurately scale, measure, and mix ingredients to maintain quality, yield, and cost control.
  • Monitor baking times, temperatures, textures, and appearance to ensure optimal results.
  • Label, date, and store all products and ingredients following FIFO and food safety standards.
  • Maintain cleanliness and organization of all baking and pastry stations, including ovens, mixers, proofers, racks, and storage areas.
  • Operate baking and pastry equipment safely and correctly.
  • Support daily production for service, catering, and commissary operations.
  • Assist in receiving deliveries, inspecting product quality, and ensuring proper storage of baking ingredients.
  • Monitor production levels and communicate shortages, overproduction, or quality concerns promptly.
  • Follow all DOH and sanitation guidelines, including temperature logs, cleaning schedules, and safety procedures.
  • Maintain strict allergy awareness and prevent cross-contamination.
  • Participate in inventory counts, waste tracking, and yield reporting.
  • Work closely with BOH teams to support efficient kitchen operations.

Qualifications:

  • Food Protection Certificate
  • Baking skills and experience
  • Physical ability to stand and lift heavy items
  • Physical ability to stand and lift up to 50 pounds

Compensation: Salary ($70,000.00 - $75,000.00)
