Job Details

Responsibilities include but are not limited to:

Bar Program & Beverage Execution
  • Execute craft cocktails and thoughtfully developed non-alcoholic beverages with precision, consistency, and attention to detail.
  • Collaborate with the Lead Bartender, Chef and Kitchen team to support seasonal beverages that complement the tasting menu and reflect Dakar NOLA’s culinary vision.
  • Maintain bar readiness through detailed mise en place, including spirits, syrups, garnishes, glassware, ice, and non-alcoholic components.
  • Uphold cleanliness, organization, and fine-dining standards behind the bar at all times.
Pre-Service Preparation
  • Set up the bar and dining room before service, ensuring all stations are stocked, organized, polished, and service-ready.
  • Review beverage menus, pacing, and service flow, reservations, timing, and special guest needs.
  • Support dining room readiness as needed, including table setup, polishing silverware, prepping trays, and staging service items.
  • Assist with filling handwashing kettles and completing final pre-service checks.
Service
  • Greet guests warmly and embody Dakar NOLA’s hospitality and service standards.
  • Prepare and serve cocktails and non-alcoholic beverages accurately and efficiently during service.
  • Maintain cleanliness, composure, and organization behind the bar throughout service.
  • Communicate clearly with servers, expo, and the kitchen to support pacing and menu progression.
  • Support table service as needed, including water service, busing, resetting tables, assisting at the pass, and marking tables for upcoming courses.
  • Contribute to a calm, collaborative service environment through teamwork and situational awareness.
Post-Service Reset & Closing Duties
  • Break down and reset the bar according to standards; clean and organize all tools, glassware, and surfaces.
  • Restock bar mise en place, glassware, garnishes, and non-alcoholic components for the next service.
  • Assist with dining room resets between seatings, including tables, silverware, water service items, and restrooms.
  • Confirm the bar and dining room are fully reset, clean, and ready for the next service 

Required Qualifications:

  • Minimum 4 years of bartending/restaurant experience with focus on craft cocktails
  • Strong attention to detail and a passion for fine dining hospitality
  • Ability to thrive in a collaborative environment

Schedule:

  • Five-day shift (2:30 pm - 11:00 pm CT)

Attire:

  • Black close-toed nonslip shoes and professional pants
  • Hair must be pulled and pinned back

  • Keeps a positive attitude in high stress situations with strong problem-solving skills

Dakar NOLA is a modern Senegalese tasting menu restaurant. Like the cuisines of the two coastal cities from which it takes its name, Dakar NOLA highlights seafood from local waters and produce from farmers here in South Louisiana. The menu is inspired by Chef Serigne Mbaye’s most cherished memories of his childhood in Senegal, where he learned to cook at his mother’s knee. Dinners at Dakar NOLA feature multiple courses, some served family style in homage to west African dining traditions.

Our goal is to explore and define modern Sengalese cuisine by using traditional Sengalese cooking spices and techniques as well as cooking techniques Chef Serigne has learned working in the kitchens of Commander’s Palace, Atelier Crenn, and Atelier Joel Robuchon.

Chef Serigne Mbaye studied culinary arts at New England Culinary Institute. He has worked at various restaurants featuring Japanese, Cuban, French, and Creole cuisines in the years since. These experiences have led him to discover flavor combinations he previously had never imagined. But he remains focused on Senegalese cuisine and the myriad of possibilities available using that rich tradition as a culinary foundation.

Many Africans who came to Louisiana during the slave trade were Senegalese. The echoes of their food traditions, as well as those of Africans from Haiti and the entire west coast of the continent, still echo in the Creole pots of New Orleans. Though born in New York and raised in Dakar, Chef Serigne feels most at home in New Orleans where his culinary voice can express itself most fully.
