Who We’re Looking For
We are seeking a skilled and disciplined Line Cook or Chef de Partie to join the award-winning kitchen team at Marea NYC. This role is ideal for a cook with strong technical skills, leadership ability, and experience working multiple stations in a refined kitchen. The ideal candidate is dependable, consistent under pressure, and ready to operate as a station lead while upholding Marea’s standards of precision, flavor, and presentation.
Must have roast and pasta making experience.
Essential Duties
- Execute dishes to exact Marea standards for taste, timing, temperature, and presentation
- Lead assigned station and maintain full ownership of prep, organization, stocking, and cleanup
- Train, support, and guide junior cooks and stages as needed
- Demonstrate mastery of multiple stations, including transitions between hot and cold production
- Follow Chef directives and assist with menu changes, specials, and seasonal updates
- Monitor product quality, freshness, and storage procedures according to DOH compliance
- Maintain clear communication with Chefs, expeditors, and BOH team during high-volume service
- Uphold cleanliness, sanitation, and safety standards at all times
- Contribute positively to kitchen culture — teamwork, professionalism, and accountability are essential
Specific Requirements
- Ability to work calmly and efficiently in a fast-paced, high-pressure service environment
- Must be able to lift, carry, or move up to 35lbs
- Ability to stand and move for extended periods (8–10 hour shifts)
- Ability to bend, reach, and walk up and down stairs as needed
- Comfortable working in high-heat kitchen conditions
- Must be punctual, in full clean uniform, and adhere to strict personal hygiene standards
Qualifications
- Minimum3+ years of relevant professional kitchen experience, including fine dining or high-volume scratch kitchens
- Strong station skills and experience working sauté, grill, fish, garde manger, or pasta
- Ability to execute with speed, precision, and consistency during peak service
- Proven ability to work independently while also supporting team success
- Culinary school a plus, but not required
- Passion for Italian cuisine, seafood, pasta, and ingredient-driven cooking
- Open, flexible schedule — AM/PM, weekends, holidays as needed
- Willingness to take direction, implement feedback, and grow into more senior roles
