C as in Charlie—a Michelin Bib Gourmand–recognized Korean-Southern tapas restaurant in NoHo—is seeking a Chef de Cuisine to lead our back-of-house team.

This is a hands-on leadership role for a chef who values precision, mentorship, accountability, and culture. The CDC will oversee daily kitchen operations, uphold quality and consistency, and work closely with the team on execution, systems, and seasonal evolution.

What You’ll Do

  • Lead all daily BOH operations including prep, service, and expediting

  • Uphold standards for flavor, consistency, plating, and pace of service

  • Recruit, train, schedule, and mentor sous chefs, line cooks, and prep cooks

  • Set clear prep systems, station expectations, and SOPs

  • Collaborate with Chef-Owner on menu execution and seasonal development

  • Manage ordering, inventory, pars, and vendor relationships

  • Control food and labor costs while meeting budget targets

  • Maintain NYC DOH compliance and ensure an A-grade kitchen at all times

  • Foster a calm, professional, ego-free kitchen culture built on respect and accountability

  • Lead by example during high-volume services

What We’re Looking For

  • Proven CDC or Sous Chef experience in NYC kitchens

  • Strong technical foundation across multiple stations

  • Natural leader who teaches, communicates clearly, and develops people

  • Organized, detail-oriented, and proactive problem solver

  • Calm under pressure with strong expediting instincts

  • Team-first mindset with humility, consistency, and reliability

  • Ability to follow existing systems while improving them thoughtfully

Requirements

  • 1+ years of progressive BOH experience (Sous Chef or above)

  • 1+ years in a leadership role preferred

  • Solid knowledge of food costing, inventory, and scheduling systems

  • NYC DOH Food Protection Certificate (or ability to obtain within 30 days)

  • Full-time availability including nights, weekends, and holidays
