About the Restaurant
Restaurant Naides is a Filipino-inspired fine dining restaurant. A small independent operation run by Chef Patrick Gabon and General Manager Celine Wuu. Both previously worked at Restaurant Milka, a two Michelin-starred restaurant in Slovenia and have brought together their Filipino heritage combined with their background in fermentation, preservation and sustainability expressed through the menu and beverage programs.
Summary of Position
As a sommelier at Restaurant Naides your role goes beyond the traditional constraints of wine. A large part of our beverage program also includes our non-alcoholic beverage pairing. Just like pairing a wine and understanding flavor profiles with dishes, crafting non-alcoholic beverages are a parallel. This role is for someone who is interested in flavor, has a base in wine knowledge, and is ready to learn more. In addition, we have a very curated selection of wines and ciders that focus on solely biodynamic, natural, and organic producers. As a small restaurant, we are conscious about supporting other small independent producers globally.
Sommelier Duties
Service and Operations
- Participate in all steps of service as needed
- Perform wine services such as suggestions and pairing wines
- update the wine list
- Assist in determining wine selections and overseeing service of the private dining program.
- Assist in inventory of the cellar, restocking wines, processing, and approvals of deliveries.
- Assist in prep for our house-made non-alcoholic beverages including fermentation and infusions
Education and Development
- Assist in comprehensive education programming for both FOH and BOH; classes, vender talks and tastings
- Maintain professional relationships with purveyors and wine industry professionals.
- Maintain personal education and continued wine studies.
- Participation in outside trade tastings and other educational seminars
Experience Required:
- Previous fine dining restaurant experience required.
- At least two years of experience in a sommelier role
- Certified/Advanced Sommelier certificate through the Court of Master Sommeliers, or equivalent certification and/or corresponding knowledge/experience
- Food Handler’s certification
