Location: The Tampa EDITION

The Specialty Chef is accountable for the quality, consistency, and production of the specialty restaurant kitchen at The Tampa EDITION. This role exhibits strong culinary leadership by personally performing culinary tasks while leading the kitchen team and managing all food-related functions.

Employment for this role is with Marriott International. Food & Beverage menus are offered through a third-party culinary licensing arrangement with Chef John Fraser.

The Specialty Chef coordinates menus, purchasing, staffing, and food preparation for the specialty restaurant, working collaboratively to enhance guest and employee satisfaction while maintaining operating budgets. This position ensures all sanitation, safety, and food quality standards are achieved and develops and trains the culinary team to drive consistent results.

Key Responsibilities:

Ensuring Culinary Standards and Responsibilities

• Develops and executes menu applications and creative culinary contributions for the specialty restaurant
• Supervises kitchen shift operations in compliance with all Food & Beverage policies, standards, and procedures
• Maintains proper food handling, preparation, storage, and sanitation standards
• Plans and manages food quantities, plating requirements, and production needs
• Communicates production and operational needs to key team members
• Assists in developing daily and seasonal menu offerings
• Ensures compliance with all applicable laws and regulations
• Prepares and cooks foods for regular service and special functions
• Evaluates the quality of raw and finished food products
• Oversees presentation standards and decorative food displays

Leading Culinary Teams

• Supervises and coordinates activities of cooks and kitchen staff
• Leads by example with integrity, professionalism, and strong communication skills
• Manages day-to-day kitchen operations and staffing
• Builds trust, respect, and collaboration within the team
• Ensures productivity, cross-training, and understanding of role expectations
• Establishes and maintains open communication and positive working relationships

Maintaining Restaurant Goals

• Supports achievement of culinary performance, budget, and operational goals
• Plans and prioritizes daily kitchen operations
• Manages kitchen operations in alignment with overall property financial objectives
• Investigates, reports, and follows up on employee incidents
• Ensures adherence to safety and sanitation standards

Ensuring Exceptional Guest Service

• Delivers culinary experiences that exceed guest expectations
• Maintains quality and consistency in daily operations
• Coaches team members to understand and anticipate guest needs
• Sets a positive example in guest interactions
• Addresses guest feedback, concerns, and complaints professionally
• Continuously seeks opportunities to improve service and satisfaction

Managing and Conducting Human Resource Activities

• Identifies development needs and provides coaching and mentorship
• Trains culinary staff on menu items, ingredients, and preparation techniques
• Participates in performance management and progressive discipline processes
• Assists with interviewing and hiring qualified culinary team members
• Utilizes available training tools to support employee growth

Additional Responsibilities

• Communicates effectively with leadership, peers, and team members
• Analyzes information and solves operational challenges
• Attends and participates in required meetings


Education and Experience

• High school diploma or GED; 4 years’ experience in culinary, food and beverage, or a related professional area

OR

• 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years’ experience in culinary, food and beverage, or a related professional area
