We are a Cuban Inspired restaurant with roots in the original Frita Batidos from Ann Arbor, Michigan. We focus on fresh, quality ingredients, with a fun and friendly atmosphere. We are looking for a positive and experienced Kitchen Manager to join our Key Managers at Frita Batidos Brooklyn. This role requires the ability to understand and recreate our recipes, organize and execute special events and catering orders, work alongside prep and line cooks as needed, collaborate Key Managers and ensure our standards are maintained.
The Kitchen Manager oversees all back-of-house operations in a fast-paced Quick Service Restaurant (QSR) environment, ensures operational efficiency, food quality, consistency, team development, and full compliance with food safety and company standards.
Key Responsibilities
- Oversee daily kitchen operations to ensure speed of service, accuracy, and consistency in food production.
- Communicate clear expectations regarding station setup, prep, portioning, and execution to kitchen team members.
- Maintain high standards of food quality and presentation, ensuring all menu items meet brand specifications.
- Train and coach kitchen staff on prep procedures, cook times, build charts, and food presentation. Complete team member training in all stations of the restaurant; prep, hotline, expo, counter, runner, mini-bar
- Delegate tasks effectively while maintaining accountability for shift execution and team performance.
- Ensure proper staffing, station coverage, and smooth shift transitions to support peak service periods.
- Monitor kitchen operations to ensure strict compliance with food safety, sanitation, and fire safety. Enforce state, federal, health and local food handling regulations and internal safety standards.
- Promote a culture of safety, cleanliness, and urgency, ensuring team members are properly trained and compliant.
- Assist in the development, upkeep and enforcement of kitchen SOPs, prep lists, and checklists during shifts.
- Step into any kitchen position as needed, including line cook or prep, to maintain service standards during high-volume periods.
- Assist with managing inventory and managing par levels.
- Manage labor in accordance with business needs.
- Ensure DOL Compliance; staff breaks, time management, etc.
Requirements
- 4-5 years of experience in a high-volume QSR, fast-casual, or fast-paced restaurant environment.
- Culinary certification or degree in Restaurant Management preferred but not required.
- Strong work ethic, positive attitude, and genuine passion for hospitality
- Comfortable using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation.
- NYC Food Handler certification.
- Proven experience training, coaching, and developing hourly kitchen teams in a QSR setting.
- Strong understanding of food safety, sanitation, and health department regulations.
- Organized, detail-oriented, and process-driven.
- Flexible availability, including weekends and peak service hours.
- Ability to perform effectively in a high-pressure, high-volume environment.
- Comfortable using POS systems, scheduling tools, and standard office software.
- Ability to stand for extended periods, bend, reach overhead frequently, and lift up to 50 pounds.
