Led by Chef Sebastian Vargas

At the heart of Los Félix is Chef Sebastian Vargas, a Colombian-born visionary whose resume includes Osteria Francescana, Eleven Madison Park, and Fäviken Magasinet. Chef Vargas brings ancestral techniques, sustainability, and a reverence for corn to every dish. His culinary philosophy centers on biodiversity, heritage ingredients, and storytelling through food. From house-made tortillas milled in-house, every plate reflects his commitment to honoring tradition while pushing boundaries.

The Role

We’re seeking an experienced line cook who thrives in a high-performance, ingredient-driven kitchen. This individual will be a key contributor to our culinary team, executing dishes with precision, honoring ancestral techniques, and elevating the guest experience through every plate.

Minimum of 1- 2 years’ experience in fine dining is required. We’re looking for professionals who understand the rhythm, rigor, and refinement of elevated service—and who are ready to bring that excellence to every shift.

You Are:

  • Passionate about Mesoamerican cuisine, fermentation, and seasonal sourcing
  • Skilled in mise en place, station management, and consistent execution under pressure
  • A team player who communicates clearly and supports a culture of collaboration and respect
  • Excited to work in a kitchen that values creativity, sustainability, and storytelling
  • Experienced in high-volume, high-standard environments, with a deep respect for culinary craft
